Cinnamon comes from the bark of one of the trees in the cinnamon family. Cassia cinnamon was mentioned as a medicine by Emperor Shennong of China around 2700 BC. Cinnamon is also mentioned in Egyptian papyrus scrolls from around 1500 BC and in the Old Testament.

The origin of cinnamon was long a mystery to the Europeans. Herodotus and Aristotle told of how giant ‘cinnamon birds’ gathered cinnamon from an unknown land and built their nests from it. Cinnamon was so precious that it was considered a gift worthy of the gods.

Cinnamon has been used as a digestive aid and is said to lower blood sugar. Ceylon cinnamon, also known as true cinnamon, is the most prized of the cinnamon varieties and, unlike cassia cinnamon, does not contain large amounts of coumarin, which is harmful to the liver.
